Lemon and Rosemary Baked Salmon

Serves 4 – very good leftover in a salad the next day.
Ingredients

  • 4 salmon filets
  • 2 T Lemon Olive Oil
  • 4 sprigs of fresh Rosemary

Instructions

  • Preheat oven to 375F degrees
  • Place filets into a 9×13 pan coated with cooking spray
  • Drizzle with the lemon olive oil
  • Press a sprig into each salmon filet
  • Top with freshly ground salt and pepper
  • Cover with foil and bake for 20 minutes
  • Remove the foil and bake another 5-10 minutes until done
  • Remove the rosemary prior to serving
