Baked Asparagus with Balsamic Butter Sauce

Serves 4-6
Ingredients

  • 1 pound fresh asparagus, trimmed
  • Coconut oil
  • Salt and Pepper to taste
  • 2 tablespoons butter olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon good quality balsamic vinegar

Instructions

  1. Preheat oven to 400 degrees F.
  2. Coat a large rimmed cookie sheet with oil (I use coconut oil)
  3. Arrange the asparagus on a baking sheet and season with salt and pepper.
  4. Bake asparagus 12 minutes in the preheated oven, or until tender.
  5. Mix the olive oil, soy sauce and balsamic vinegar. Pour over the baked asparagus put back in oven for about 3-5 minutes.
  6. Enjoy!
