Balsamic Caprese Pasta
Serves 6-8
Ingredients
- 4 cups uncooked penne
- 8 ounces fresh mozzarella, chopped or Bocconcini
- 1/2 small red onion chopped
- 1 cup grape tomatoes halved
- 4 teaspoons good quality balsamic vinegar or to taste
- 2 tablespoons basil olive oil or to taste
- Handful fresh basil torn
- Flat leaf parsley chopped, to taste
- Salt & pepper to taste
Instructions
- Bring a salted pot of water to a boil and cook the pasta according to package directions.
- Meanwhile, prep your other ingredients.
- When the pasta is done, drain it and rinse it under cold water. Let pasta drain thoroughly so it’s not too wet before adding other ingredients.
- Add the mozzarella, onion, tomatoes, vinegar, oil, basil, parsley, and salt & pepper to the bowl. Gently toss the pasta and taste for seasoning adjustments. Chill for an hour or serve immediately.
